The Khorasan Graziella Ra Wheat Semolina, which we use for our pasta, is now available for homemade preparations in convenient 500 g packs. The Khorasan wheat, also known as Turanicum, grew in ancient times in the Mediterranean Basin. The rediscovery of this seed is the result of an immense work: from a 1 kg bag in the late 1970s to around 1,800 quintals in 2022, we proudly contributed in recovering a piece of biodiversity both in the fields and at the table. As of today, we cultivate the Khorasan in the best fields beside our mill where it is then delicately ground. It has a lower gluten index than traditional wheats and, thanks to the semi-wholemeal recipe, it is also a source of fiber. The new MAP (Modified Atmosphere Packaging) is 100% compostable and allows a longer shelf life (18 months).
