Our origins
GINO GIROLOMONI
Gino’s idea was to restore life to a hill, to this hill, where he chose to plant the seeds of his idea: growing and transforming wheat into pasta, all in a single place. It was the start of the Girolomoni farming cooperative, where production is 100% organic.
Gino Girolomoni was not only a pioneer of organic agriculture in Italy, he was also a political activist, intellectual, writer and above all, a farmer. His life is the story of his dream: restoring dignity to the land and to those who protect it, the farmers. From growing Italian wheat and making wholemeal pasta at the Monastery of Montebello, he was able to trigger the rebirth of an entire area.

FAIR TRADE
All of us, from sowing the wheat to making the pasta, contribute to the value of our products along the organic supply chain. We believe in a sustainable economic model, where those who bring value, receive value.
BIODIVERSITY
We promote the natural fertility of the soil, rotating our 100% organic wheat with other crops, respecting nature’s cycles.
MILL
We create “bespoke” blends of Italian wheat from each harvest. We grind the wheat and within a short time, mix our organic semolina in the adjacent pasta factory.
ITALIAN ORGANIC PASTA
We have chosen a production process in our pasta factory that aims to capture and preserve all of the taste, aroma and nutrients of our wheat.
