After processing the semolina from the mill using spring water from the surrounding hills, we gently press the pasta dough through the dies used to shape Girolomoni pasta.

This kind of extrusion gives a smoother, shinier surface, which is perfect for simpler sauces that adhere easily to the pasta. You can find it in different cuts and wheat types. Try them all.
